Every Lebanese family has an opinion on whose olive oil is best.

We tasted our way across Lebanon, region by region, and only the best of the best made it into our bottles.

Our story

It started at the family table

My father has a habit. Whatever it is, he finds every version of it, tastes them side by side, and settles on the best. Over the years, we’ve done more taste tests than I can count.

Sooner or later the habit had to reach olive oil, the one subject Lebanese families argue about most. So we did what we always do. We tasted across regions, compared, and kept tasting.

There is no single best region. There are places where people take real care of their land and their oil.

Zaitná is how we share those places. Each edition comes from one village and one producer we chose by tasting, and it carries their name.

How an edition is chosen

Our method is the reason to trust the bottle

1A lead

It starts when we hear about a village's olive oil, or someone shares a sample and we love it.

2Go to the source

We travel to that village and ask around about its best olive groves.

3Walk the groves

You can tell a grove that is cared for just by looking at the trees. Those are the ones we pick.

4Meet the owners

We meet the people who own the land, taste their oil, and collect samples.

5The taste test

We taste all the samples side by side, and only the best one is bottled as Zaitná.

Editions

One village per bottle

Each edition is a limited run from a single place, with its own colour on the bottle. When it is gone, it is gone until the next harvest.

At an altitude of 1,200–1,400 meters, Kfarmishki lies in the heart of the Beqaa, where fertile lands and a cool mountain climate produce exceptional olives. The N.5 edition is a golden-green extra virgin olive oil, known for its balanced flavor profile and subtle peppery finish, reflecting the essence of Lebanon’s Beqaa valley.

Tasting tells us. The lab confirms it.

Acidity, measured as free fatty acids, shows how healthy the olives were and how carefully they were handled before pressing. To be called extra virgin, an olive oil must measure 0.8% or less.
